A combi steam oven has a boiler, a tank or a plumbed feed, a fill valve and a drain. Nothing else in this catalog has a water side, and everything hard water does to a kettle it does to this — only inside a wall oven, out of sight, on a schedule nobody is watching.

Why the interval is wrong here

The appliance counts cycles against a hardness value set at the factory. It is a reasonable average and it is not this city. Descaling ahead of the message is the difference between a chore and a boiler.

What decides the figure

Questions about viking steam oven descaling

It has never asked to be descaled.

That is not the same as not needing it. The interval is calculated rather than measured, from a hardness figure set at the factory, and South Florida water is well beyond it. An oven that has never asked is often the one most overdue.

Can I do it myself?
